What could be more exciting than watching awe- inspiring athletes trudge through WODs that make my 1. Fran seem like child? The local team at lululemon athletica asked me to prepare a BUNCH of paleo snackies for all the athletes and spectators! I took full advantage. I made a tasty breakfast and Austin made the coffee. I also knew that going into a weekend of watching the regions best athletes give it their all having NOT given MY all at my own little Cross. Fit schedule would be bad. How could I cheer them on when I punked out myself? I rewarded myself with a cold brew from my favorite coffee shop and got busy making energy bars. Day 3. 8 ! First day of Regionals!! Nothing breaks my heart more than when people either don. Make LOTS and save the leftovers. I unloaded a breakfast recipe I. I got there just in time to hug my lululemon friends and learn that our tailgate was officially rained out. More bars for me and all the friends I made. Wondering who that dude is up there? After he finished the above WOD, he went back to coach and cheer on the other athletes. That dude is a class act and I can! I make bars when I wake up, I eat them for breakfast, I use them to make friends with Cross. Fit athletes, I use them to remind my current friends why they like me, I eat them for lunch, I hide them in my purse, I go home to make more, and then I dream of them. Have you wondered why I haven? Stay tuuuuuuned. Day 4. We had an awesome day watching the finals of the South Central Regional Cross. Fit Competition. I mean, they complete TWO workouts each day ! My few days in the office are slammed until Gus and I can break free for our Thursday drive West. Day 2. 7 ! Do you sometimes find that you get way more work done when you? I buckled down at our CS dining room table and got a solid head start on my week. The best part is that I made friends with this little bugger. He sat on the window just over my head for about 2 hours. Food was pretty easy and low- key today. Everything was out of the kitchen except for our dinner, which came from a local BBQ joint. Day 2. 8 . I kicked butt at day job and blog job. I woke up and treated myself to an egg white souffl. I got to work nice and early, accomplished a lot, stopped at the grocery store on my way home, and whipped up an awesome dinner for my parents and visiting sister. Austin left for San Angelo early to enjoy a camping trip with the dudes in his family, so he missed out on this meal. We enjoyed a sundried tomato pesto stuffed chicken breast, crispy garlic broccoli, some white wine, and a double dessert of my experimental strawberry almond butter ice cream and chia seed mango pudding. My sweet sister brought one of my MOST favorite lunches to the office so I wouldn. I snacked on freeze- dried cherries and a Larabar until it was way past quittin. I went home to rescue my very bored puppy from his day of solitude and passed out without dinner. Not good to skip dinner but I was just too darn tired to whip something up. Again, lesson learned that I need to be more prepared. Day 3. 0 ! I got a nutritional jumpstart on my morning with my favorite egg white souffl. My morning snack was simple and easy. I went home to play with Gus for lunch and grabbed a quick cold- cut meal out of the fridge. Gus and I hit the road with a big gulp of my new favorite Starbucks . We landed in San Angelo just before dinner. I was surprised & excited when I found that Austin, his two brothers with their wives, and his sister . I was committed to lead a conference call . The boys surprised me with a couple containers of my favorites: barbacoa & machicado w/egg. Because my Mother taught me to never arrive empty- handed, I showed up in San Angelo for white roses for Austin. WE snacked on these cookies, some divine non- paleo cookies made by Sherin, Austin.
